入秋以后，又是进补的好时令，中国人补身的食物有很多，其中以滋阴和温阳的为主。羊肉一向被视为是温阳助火的食材，是对身体非常有益的食物。每到秋冬时节，无论是南方或是北方，都有吃羊的习惯。古往今来，羊肉所烹制的美肴是中国人菜谱里不可或缺的。在唐朝以后，羊肉的吃法已是多种多样，到了清代，更有享誉盛名的“全羊席”。
宫廷里的“全羊席”是非常讲究的，在开席前摆上白水煮制的整羊头，上冷菜、素菜、味菜等，然后才是全羊的大菜，最后上点心和汤羹，席终摆上白水煮的羊尾。在“全羊席”的菜肴里，全部都是以羊为主料来制作的，其工艺精湛，品种多样，最特别的是菜名中不见有“羊”字，均冠以形象的别名，极为雅气。今天聊一下家常菜支竹羊腩煲。
材料：羊腩、支竹、马蹄、红萝卜、姜片、矿泉水。
调料：花生油、南乳、米酒、生抽、盐、片糖。
做法：羊腩洗净，斩大件备用。红萝卜、马蹄洗净去皮，红萝卜斩大件备用。烧镬，放羊腩炒干水分备用。烧锅放油，爆香姜片、南乳，放入羊肉，不停地翻炒，加入米酒、矿泉水、生抽、盐、片糖调味，放入马蹄、红萝卜、支竹，盖上锅盖焖至羊腩熟后便可。
提示：羊肉忌与醋、南瓜同吃。
