主料
螺片400克,潮州柑片100克,火腿30克,芫荽25克,猪油75克,味精7.5克,鱼露10克,麻油10克,胡椒粉1克,芥末酱2碟,梅膏酱2碟。
做法
1、先将螺片洗净,用清水浸半小时捞起,滤干水。
2、柑片用刀片成相连的圆形片。火腿用油炸过后切成片。1片火腿1片柑片摆在餐盘四周,中间放芫荽。
3、在大碗中加入猪油、味精、麻油、鱼露和胡椒粉拌匀。
4、螺片用沸上汤焯熟后,倒出、沥干,再倒入(3)制得的味料中拌匀,取出,放入(2)准备好的餐盘中。跟芥末酱2碟和梅膏酱2碟上席。
特点
香滑爽脆,海鲜味浓,色泽多彩,赏心悦目。
