主料
螺片400克，潮州柑片100克，火腿30克，芫荽25克，猪油75克，味精7.5克，鱼露10克，麻油10克，胡椒粉1克，芥末酱2碟，梅膏酱2碟。
做法
1、先将螺片洗净，用清水浸半小时捞起，滤干水。
2、柑片用刀片成相连的圆形片。火腿用油炸过后切成片。1片火腿1片柑片摆在餐盘四周，中间放芫荽。
3、在大碗中加入猪油、味精、麻油、鱼露和胡椒粉拌匀。
4、螺片用沸上汤焯熟后，倒出、沥干，再倒入（3）制得的味料中拌匀，取出，放入（2）准备好的餐盘中。跟芥末酱2碟和梅膏酱2碟上席。
特点
香滑爽脆，海鲜味浓，色泽多彩，赏心悦目。
