[原料]牛百叶250克，海蜇皮75克，墨鱼脯100克，胡萝卜25克，香菜25克，韭芽25克，葱丝10克。
[调料]豉油皇50克，黄酒10克，葱姜汁10克，清油25克，胡椒粉0.1克。
[操作程序]
1．海蜇皮放入凉水里泡软，切成丝，放在温水中烫后继续用凉水泡发10个小时；墨鱼肉面朝上剞上花刀再顺长切成粗丝；韭芽改刀成段；香菜洗净取叶尖部分。
2．锅中放清水，烧开，放入酒、葱姜汁，再放入墨鱼、牛百叶、胡萝卜丝、韭芽，烫熟捞出。海蜇丝放在50℃左右的温水中烫一下，捞出，与牛百叶等原料拌匀后装入烩盘里。盘边放上香菜，浇上豉油皇，撒上胡椒粉， 中间放上葱丝，上浇热油即成。
[特色点评]脆嫩爽口，菜型美观大方。原料普通，组合新颖，适用于各种规格的用餐。
[要领提示]烫蜇皮时水温不宜太高，否则海蜇似“橡皮筋”，无法食用。
