[原料]牛百叶250克,海蜇皮75克,墨鱼脯100克,胡萝卜25克,香菜25克,韭芽25克,葱丝10克。

[调料]豉油皇50克,黄酒10克,葱姜汁10克,清油25克,胡椒粉0.1克。

[操作程序]

1.海蜇皮放入凉水里泡软,切成丝,放在温水中烫后继续用凉水泡发10个小时;墨鱼肉面朝上剞上花刀再顺长切成粗丝;韭芽改刀成段;香菜洗净取叶尖部分。

2.锅中放清水,烧开,放入酒、葱姜汁,再放入墨鱼、牛百叶、胡萝卜丝、韭芽,烫熟捞出。海蜇丝放在50℃左右的温水中烫一下,捞出,与牛百叶等原料拌匀后装入烩盘里。盘边放上香菜,浇上豉油皇,撒上胡椒粉, 中间放上葱丝,上浇热油即成。

[特色点评]脆嫩爽口,菜型美观大方。原料普通,组合新颖,适用于各种规格的用餐。

[要领提示]烫蜇皮时水温不宜太高,否则海蜇似“橡皮筋”,无法食用。
