工艺流程：
注射－嫩化（活化）－滚揉（按摩）－灌装（模具）－蒸、熏－冷却
将经过修整后的肉块进行注射（被注入的盐水必须事先配置并经充分溶解），然后通过嫩化，再将经过嫩化后的肉块放入滚揉机内，根据注射量的大小设定滚揉时间，进行滚揉按摩。滚揉结束后，将肉块经灌肠机或手工装入模具内，送入烟熏箱或蒸煮桶内蒸煮。产品若需烟熏，则在脱模后再次送入烟熏箱内烟熏。
产品的冷却可分为自然、水冷、强制冷却，使火腿迅速降温，以通过细菌高速繁殖温度范围。
