原料:
鸭肫250克,鸭心250克,鸭肝250克,鸭肠250克,青菜100克,水发粉丝100克,冬菇、冬笋各适量,肉汤500克,精盐15克,味精5克,料酒2克。
做法:
1、将鸭肫、鸭肝、鸭心分别切成片,鸭肠剖开切成段或片状;青菜掰去老帮,修理好,用清水洗净;冬菇用温热水泡好,挑净杂质,择去柄根,用清水洗净;冬笋切成片。
2、铁锅放火上,加入水,待水沸时分别将鸭肫、鸭肝、鸭心、鸭肠焯一下,用冷水投凉待用。
3、火锅底放青菜和水发粉丝,然后,把鸭肫、鸭肝、鸭心、鸭肠分别码好,最上面用冬菇、冬笋间隔摆好,然后加入肉汤、精盐、味精、料酒,火锅生火,待汤沸后端上桌即可食用。
特色:
主料脆嫩,汤醇味美,别有风味。
