原料：
鸭肫、鸭肝各2个，葱3根，姜5片，辣椒2个
辅料：
料酒1大匙、酱油2大匙、盐1/2茶匙、醋1/2茶匙、糖1茶匙、水淀粉1/2大匙、胡椒粉少许。
做法：
1、鸭肫洗净、切花、鸭肝切片，葱切小段，姜切丝，辣椒切片。
2、先将鸭肫、鸭肝用开水氽烫过，捞出，另用2大匙油炒葱、姜、辣椒，然后放入鸭肫、鸭肝和所有调味料，炒入味即盛出。
tips：
1、鸭肫、鸭肝或鸡肫、鸡肝都俗称下水，炒的时间要短，口感才脆嫩。
2、这是一道重口味的下酒菜，宜用大量的辛香料来烹制简单又廉价的下水。
特色：
下水-内脏类食物大多含有维生素b，可增进食欲、消除疲劳。
