【原料】
鸡肉（１２５克）、鸡汤（１２５０克）、海参（２００克）、鸡肫（２只）、小冬菇（或鲜蘑菇）（１０只）、水发鱿鱼（１２５克）、猪肉（１２５克）、鱼肉（１７５克）、猪油适量，（精盐、胡椒粉、麻油、黄酒、味精、白糖各少许。）
【制作过程】
一．把鸡肉剁成茸，加湿菱粉和盐，做成１０只圆球，把鱼肉、猪肉也分别剁成茸，加盐、胡椒粉、麻油、干菱粉，各做成圆球１０只。把鸡肫、海参、鱿鱼都各开成１０块，把小冬菇洗清，剪去老蒂。二、这些原料一起下开水锅，下酒、猪油川熟，捞出装在小碗中，再加味精,盐,胡椒粉扣好,上笼蒸熟取出,倒入大汤碗内,加鸡汤 烧开,就原汤锅上桌.
