材料:墨鱼仔500克,日本烧汁100克。

制法:

1、将墨鱼仔洗净,用老抽上色,下入油锅炸至金黄色捞起。

2、用蒜茸、椒米、姜米等料起锅把日本烧汁、上汤、米酒注入锅中,调好味,把汗舀起一半放在小碗中待用。

3、放墨鱼仔于锅内,焗至入味,捞起,摆放在预先用锡纸包好的碟中,中间放上焗至火烫的鹅卵石,上桌后,由服务员把小碗中的汁轻轻倒在石头上面即可。
