原料准备:糯米500克、枣泥馅100克、鸡净肉100克、鸡蛋3个、生粉50克、红肠半根、冬笋(熟)50克、椰丝50克、生姜适量、葱花适量。
双味珍珠元子的制作过程是:
1.糯米洗净用水浸泡(时间冬长夏短),取400克,趁热加入蛋液及生坯冷却;
2.枣泥馅分挤搓圆,鸡肉制成颗粒,红肠、生姜、冬笋切成小颗粒,下锅炒成三鲜馅,加葱花冷即;
3.糯米坯分别包入甜咸馅沾裹剩余的泡米,上笼蒸熟(5分钟),出笼,包甜馅的再均匀地沾上椰丝。
4.装盘美饰。
特色:双味珍珠元子色泽分明,形态美观,糯香滋润,咸甜皆宜。
