原料: 原 料：
蛇皮500克，胡萝卜50克，香菜50克，黄瓜50克，蒜瓣5克，葱段5克，姜片5克，精盐5克，白糖1克，味精2克，麻油50克，胡椒粉1克，绍酒10克。
制法: （1）将蛇皮刮去鳞片，洗涤干净，放在高压锅内，加水、绍酒、葱段、姜片，上中火烧约15分钟。然后取出，晾凉，切成5厘米长、0.2厘米粗的丝，放在碗内。
（2）交胡萝卜、黄瓜洗净，切成5厘米长、0.2厘米粗的丝，加入精盐（2克）腌渍后，挤干水分，放在蛇皮碗内。蒜瓣捣成泥。香菜洗净，切成5厘米长的段。将蒜泥、香菜放入蛇皮碗内，加入精盐、味精、白糖、胡椒粉、麻油拌匀，将盘即成。
特点: 色彩丰富，蛇皮软嫩，配料脆嫩，咸鲜味香。
