·配 料: 鳝鱼段半斤，入沸水锅焯一下除腥味后捞出；香菇五朵切丁，鲜朝天椒五个切圈，熟花生仁两大匙切末，油酥辣椒一匙，红油两匙，花椒粉一咖啡匙，美极鲜酱油一大匙，白糖一匙，黄酒一大匙，鸡精、盐适量，姜末一匙，葱碎一匙，香油一匙，鱼露一大匙，姜片五、六片、香葱六棵切段。
·操 作:
1、锅置火上加约一斤汤或水，烧沸后放姜片、葱段、黄酒煮出香味，用漏勺除去料渣。
2、倒入鳝鱼段、香菇粒、盐，沸后煮约两分钟。
3、连汤倒入盆中，加盖泡冷（中午做晚上吃，或早上做中午吃）。
4、将辣椒圈、花生仁、油酥辣椒、红油、花椒粉、美极鲜酱油、白糖、鸡精、姜末、葱碎、香油、鱼露一同放碗里调兑好。
5、鳝鱼段冷后把调料倒入盆里再浸泡至少二十分钟。
6、上桌开吃。
