主料:豆腐渣500g
辅料:青豆50g
调料:盐、胡椒粉、鸡精、高汤、水淀粉、香油、生抽、食用油、姜葱末
烹制方法:
1、将豆腐渣用纱布口袋装好后用清水冲洗至水清,沥干水分,下锅中煸炒至干。青豆头天水泡回软,用水煮熟,挑出豆皮,洗干净待用;
2、坐锅点火入油,待油温至3成热时,下姜、葱末炒香,大豆渣炒匀加入盐、胡椒粉、鸡精、生抽、高汤、青豆炒至豆渣出香味。用水淀粉勾芡入盘。将中间扒开,放些葱花,香油烧热淋在葱花上即成。
特点:粗纤维丰富,口味鲜咸香。
