原料: 原 料：
粗壮嫩芹菜150克，鸭肠5根，泡红椒5克，蒜3瓣，葱白5克，姜5克，味精1克，绍酒5克，胡椒粉1克，白醋2克，麻油10克，熟花生油25克，精盐10克，小苏打50克。
制法: （1）将蒜瓣、葱、生姜（去皮）、泡红椒（去籽）均切成末，加入精盐（2克）、味精、胡椒粉、熟花生油、白醋、麻油调成味汁。
（2）将芹菜洗净，切成5厘米长的段，放沸水锅内焯一下捞出，摊开稍凉。
（3）用筷子将鸭肠翻过来，用精盐捏洗干净，加小苏打静置2小时至肠厚实肥大，再用清水漂去咸味。炒锅内放清水、葱、姜、绍酒烧沸，放入鸭肠烫爆至熟捞出，撒上精盐拌匀，切成5厘米长的段。在每段鸭肠内插入一根芹菜段，将在盘内，浇上调味汁即成。
特点: 青白分明，柔软脆嫩，造型别具一格。
