做饽饽法
上好干白面一斤，先取起六两，和油四两（极多用至六两，便为顶高饽饽），同面和作一大块，揉得极熟。下剩面十两，配油二两（多至三两），添水下去，和作一大块揉匀。才将前后两面合作一块摊开，再合再摊，如此十数遍。再作小块子摊开，包馅下炉熨之，即为上好饽饽。
又法
每面一斤，配油五六两，加糖，不下水。揉匀作一块，做成饼子。名“一片瓦“。
又法
里面用前法，半油半水相合之面。外再用单水之面，薄包一重，酥而不破。其馅料，用核桃肉去皮研碎半斤，松子、瓜子二仁各二两，香圆丝、橘饼丝各二两，白糖、板油（如入饴糖，即不用板油矣）。月饼同法。
