猪肺，奶汤，清汤，精盐，葱椒料酒，葱段，姜片，口蘑片，冬笋片，白菜心，水淀粉

将猪肺从肺管处灌入清水，待胀起后平放案上使血水自行流尽，如此几遍后用刀划破肺身，使水流尽呈白色，然后用清水煮七成熟，捞出择洗干净掰成枣大的块，放入沸水中煮五分钟，捞出滗净水放入大碗内，炒锅内放葱油烧热，加入奶汤，清汤，精盐，葱椒料酒，葱段，姜片烧沸，倒入银肺碗内，入笼蒸一小时待用，炒锅内放葱油烧热下入奶汤，清汤，精盐，姜汁，味精，口蘑片，冬笋片，白菜心浇沸，盛入汤碗；将银肺从笼内取出，去掉葱姜，滗去汤不用，倒入锅内，加入葱椒料酒，水淀粉勾芡，倒入汤碗内放上火腿片即成。
