开国第一宴源于1949年10月1日中华人民共和国诞生。党和国家领导人当日设宴庆祝，宴席其中有一道菜即为大蒜烧裙边，说明大蒜早已上了国宴。
用料：大蒜200克，鲜圆鱼裙边400克,五花猪肉500克，鸡半只，葱姜50克，黄酒200克。
做法：
①裙边放入开水锅内烫一烫取出，刮去黑皮，洗净后切成大小均匀的斜象眼块。
②五花肉、鸡分别剁成块开水焯过去血秽后，用裙边一起放入锅内，加入黄酒、葱姜和适量的水，以大火烧开，中火煨至裙边八成熟烂捞出。
③大蒜两头去蒂，放入油中炸至上色。
④炒勺上火，略放底油，放入葱姜末、煨裙边的汤，调好口味，放入裙边，略放少许胡椒粉、水淀粉勾兑出锅即可，鲜香肥润，滋阴补阳。
