目的:探索中药加味茵陈汤对急性肝功能衰竭大鼠的防治效果。
补充资料:川味雪豆炖肘子
主料:猪肘子、雪山大豆
辅料:葱节、绍酒、姜、川盐、八角、猪骨数根
制作方法:
1.肘子刮洗干净,同猪骨一起人沸水中氽烫以去掉血水浮沫;
2.雪豆洗净,姜拍破,葱挽结;
3.把猪肘放入垫有猪骨的砂锅内,加入洗净的雪豆,姜、葱、八角、绍酒旺火上烧开后
移到微火上煨炖约 3小时,待汤锅煮透,用筷轻轻一戳肉皮即烂为止;
4.吃时捡去姜、葱,放川盐后连汤带豆舀入碗中即成。
操作注意:
1.雪豆如果先用水泡,煮时反不易烂;
2.大火烧开,小火慢炖。
风味特点:
四川西南汉源县出产的雪豆,因其颗大、色白、质优闻名。用汉源出产的雪豆同猪肘炖制菜,雪豆粒大,色白沙糯,肘子软,营养丰富,是四川家常名肴。这种雪豆还有一特别有趣之处,它能在锅内久煮不裂,但一舀到碗里就会立即裂开,当地人形象地称之为"碗上开花",或者称"神仙豆"。
