果糖是一种从食物中进入人体的单糖,在人体内经过代谢后可转变为糖原、葡萄糖及脂肪。果糖在肝肾及肠黏膜的果糖激酶催化下,转变成1-磷酸果糖。后者经过果糖-1-磷酸醛缩酶的作用,分解成磷酸二羟丙酮及甘油醛,甘油醛通过甘油醛激酶的磷酸化作用转变成磷酸甘油醛。后者又可和磷酸二羟丙酮缩合成1,6-二磷酸果糖,1,6-二磷酸果糖再转变成6-磷酸葡萄糖,后者最终转变为葡萄糖或糖原。果糖在肠腔中以三种形式被吸收,即果糖、葡萄糖及乳糖。临床上已发现有果糖激酶及果糖-1-磷酸醛缩酶先天缺陷。
