干菜脆饼相传始于明清时的县学府试场,是生意人为考生准备的填肚小吃。至今已有200多年历史,现在仍是金华古城最普遍的一种小吃。
制法:
(1)猪夹心肉切成小丁,与蒸软切碎的雪里蕻干菜拌匀渍一会。
(2)取面粉加菜油少许和成油酥面,再摘坯,擀皮,包馅,擀成15厘米大小的薄饼。
(3)落油锅氽炸至两面金黄色松脆即成。爱吃辣的抹点辣酱则更开胃。
特点:色泽金黄,酥脆可口,咸鲜入味,经济实惠。
