主料:茄子

辅料:豆腐丝、香菇、冬笋、五花肉、葱、姜、蒜

调料:盐、白糖、味精、酱油、醋、花椒粉、香油、水淀粉

烹制方法

1、将茄子切成条,加少许盐拌匀腌5分钟,豆腐丝过开水焯一下取出装盘;

2、坐锅点火倒油,下五花肉丁、葱、姜、蒜炒香,加入香菇、冬笋、茄子翻炒,加酱油、醋、盐、白糖调味,水淀粉勾芡,出锅放在豆腐丝上,撒上蒜末,浇热油即成。

特点:鲜香酸甜,软嫩适口。
