将乳装入钵内，安滚水中烫滚，用扇打之，令面上结皮，取起。再扇再取，令尽。弃其清乳不用，将皮再下滚水，置火中煎化（约每入配水一碗），下好茶卤一大杯，加芝麻、胡桃仁，各研极细，筛过调匀，吃之甚好。若要咸，加盐卤少许。若将乳皮单吃，补益之功更大。
