硒是人体必需的微量元素，硒缺乏会引起多种疾病，主要有克山病、冠心病、高血压、心肌梗塞、大骨节病、糖尿病等。目前防治与缺硒有关疾病的方法主要是使用亚硒酸钠和含硒酵母。鸡蛋中的硒是一种有机硒，吸收率高达80%，比无机吸收（亚吸收酸钠）高1.6倍。高硒鸡蛋中含硒量（30—50微克/个）比普通鸡蛋（4—12微克/个）高4—7倍。具有抗癌、防治心绞痛、心肌梗塞、脑血栓、风湿性关节炎、大骨节病及对某些毒物（镉、汞、砷）等有解毒作用。还有清除自由基，刺激免疫球蛋白、保持淋巴细胞，增强免疫功能，延缓衰老和促进儿童生长发育的作用。富硒蛋的生产方法是在蛋鸡饲料中加入亚硒酸钠（0.5毫克/公斤饲料）或硒酵母（10毫克/公斤饲料），连续饲喂14天后即可得到富硒蛋。为防止对鸡的不良影响，所用的含硒添加物不要长期连续使用，应间歇式添加。
