鸡肉350克，酸姜芽350克，辣椒件50克，蒜茸少许，葱段5克，芡汤35克，蛋白10克，湿蹄粉15克，绍酒15克，麻油少许，花生油750克（耗油100克）。
【制作过程】
1、鸡肉切成薄片，加入蛋白和湿蹄粉（5克）拌匀候用。在芡汤中加入湿蹄粉（10克）和麻油（少许）调成碗芡。酸姜芽挤去酸醋。
2、武火烧镬，倒入花生油，至140摄氏度时，下鸡片拉油至熟，捞起。倒出油，下辣椒件、蒜茸、葱段、姜芽炒片，再下鸡片，溅入绍酒，加碗芡炒匀，
