南方的长夏时虽仍暑热尚在,但汤饮上宜由以清暑热、祛暑湿过渡到健脾肾、祛湿热的原则,且健脾肾是更主要的。百合和中药石菖蒲煲海马(中药店有售)则有健脾肾、益心智的功效,对盛夏秋暑时体力、脑力、精力消耗过大及睡眠休息不好有辅助治疗的作用。
百合为广州人常用的煲汤料之一,其味甘能补益、性寒能清热,故可清心润肺安神。石菖蒲在中药里属化痰开窍类药物,《仙经》历称它为“水草之精英,神仙之灵药”。而海马则是补脾肾之物。
材料:百合30克、石菖蒲20克、海马3条、猪瘦肉200克、生姜3片。
烹制:百合、石菖蒲洗净,稍浸泡;海马洗净,温水稍浸泡;猪瘦肉洗净,不刀切。然后一起与生姜放进瓦煲内,加入清水2500毫升(约10碗水量),先用武火煲沸后改为文火煲2小时,调入适量食盐和生油便可。此量为3~4人用,猪瘦肉可捞起拌酱油佐餐用。
