材料:田螺,紫苏叶、沙茶酱、蒜茸、豆豉等少量。
做法:1、烧红镬,放油,把蒜茸、紫苏叶、沙茶酱、豆豉等倒入镬中,爆香。2、加入田螺不停地炒,溅入滚水,用精盐调味,炒至熟透。3、勾芡加包尾油、麻油和匀上碟。
买回来的田螺一定要用盆清水养两天,在盆内滴上几滴豆油,将田螺壳尖尾端剪去或去掉螺盖,这样,不但利于食时容易啜出螺肉,还利于让味渗进烹调时。田螺肉质丰腴细腻,味道鲜美,清淡爽口。具有清热、明目的作用。
