抑制小肠黏膜细胞的葡萄糖水解酶，使碳水化物分解产生葡萄糖量减少，并延缓或减少小肠中葡萄糖吸收的药物。如Acarbose为葡萄糖苷酶抑制剂，口服后能延缓或防止餐后血糖、胰岛素和甘油三酯水平升高，并有减少胃抑肽，升高胰高血糖素和生长抑素，降低儿茶酚胺的作用。
