【角蛋白】(keratin)一类具有结缔和保护功能的纤维状蛋白。是毛发、羽毛、碲甲、角、蚕丝、皮肤等的主要成分。根据`X`射线衍射分析，角蛋白的空间结构有`\alpha`-螺旋结构和`\beta`-折叠处层结构两种类型。前者如羊毛；后者如丝心蛋白。由于角蛋白含有较多的胱氨酸，二硫键含量特别多，在蛋白质肽链中起交联作用，因此化学性质特别稳定，有较高的机械强度。在一般条件下角蛋白都不溶于水和其他溶剂，故又称为“不溶性蛋白质”。
