补充资料:香菇烧丝瓜
一、原料:
1. 主料,水发香菇50 克,嫩丝瓜500 克。
2. 调料:精盐、味精、姜汁、湿淀粉、麻油、生油、料酒。
二、制法:
1. 水发香菇去杂洗净。嫩丝瓜去皮,顺长一切两半,切成片,下沸水锅焯透捞出。
2. 炒锅加入生油,烧热后用姜汁一烹,放入料酒、精盐、味精、香菇、丝瓜,烧沸后改为小火,烧至入味,用湿淀粉勾芡,淋入麻油,颠翻出锅装盘即成。
按:此菜肴是以丝瓜为主,配以香菇烹制而成。丝瓜性味甘凉,具有清热利湿、凉血化瘀、止血的功效。常食能顺气健脾、化痰止咳。凡湿热所致的热痢、黄疸以及湿热所致肠风便血、崩漏等症患者均可作为辅助食疗菜肴。
