产地：中国广西。
成因：桂林山清水秀，漓江是桂林的主要河道，长年清澈见底，出产的桂鱼，向以肥、嫩、鲜、滑著称，堪称“漓江清水桂鱼”。用于清蒸风味甚佳。
特点：用漓江桂鱼和猪肉丝蒸制而成，成菜鱼肉细嫩，滋味甚为鲜美，爽滑适口。
工艺：将桂鱼宰杀，治净。在鱼身两面用斜刀各剞上几刀花纹，加盐、味精、酒稍腌。将葱放入盘底，放上桂鱼，上加肉丝、葱丝、冬瓜丝。上笼用大火蒸熟取出，淋上热油，锅中加上汤，用湿淀粉勾成稀芡，淋上麻油即成。
