酸萝卜老鸭汤
酸萝卜老鸭汤鲜美可口，汤色澄亮，据说还可以去秋燥的，算得上是一道应景的家常菜了。
这道菜做法简单，但是选材不能马虎。老鸭汤当然得选老鸭子，这样比较容易去掉鸭腥味儿，我这里选用的是鸭龄一年以上的；酸萝卜也有讲究，酸萝卜的数量视鸭子大小而定，萝卜大小不同泡制的时间也要有差别，因为是这道菜主要的调味材料，所以要求会比较高，我是在菜市专卖摊点买的。呵呵！只是那家专卖店还没有品牌，没法推荐给大家。好了，现在来看看这道菜的炮制过程吧！
材料：老鸭1800克，酸萝卜900克，老姜一块，花椒四五粒。
1、老鸭子打整干净，取出内脏后切块；酸萝卜清水冲洗后切片，老姜拍烂待用。
2、将鸭块倒入干锅中翻炒，待水汽收住即可（不用另外加油）
3、水烧开后倒入炒好的鸭块、萝卜，加入备好的老姜、花椒。
经典一些的做法是用炖锅慢火煨上一两个小时，不过平时为了方便用高压锅更快些，这里就用高压锅了。
