[原料/调料]
米2.5杯﹐牛肉200g﹐鲐鱼100g﹐鲨鱼100g﹐豆腐1/2块﹐鸡蛋1个﹐萝卜300g﹐海带30g﹐蕨菜50g﹐山菜50g﹐菠菜50g﹐黄豆芽100g 佐料酱﹕酱油5大勺﹐盐10大勺﹐芝麻1小勺
[制作流程]
(1)淘米做饭。
(2)把牛肉按纹理反方向切成横竖3cm﹑7cm大小串在签子上﹐使之不卷屈捶后﹐以盐调味蒸出来。烤也不错。
(3)把鲐鱼和鲨鱼洗后,蒸或煎时以肉脯串起来煎。用别的鱼也可以﹐要小且短。
(4)将以盐调味的豆腐放在平锅上煎出来。
(5)将煮蛋切半。
(6)蕨菜和山菜泡在水里除水份后用油炒出来﹐黄豆芽去头截尾煮出来拌。萝卜切成丝用盐腌一下除水份炒出来﹐菠菜烫出来炒。
(7)把饭盛在钵子中﹐在上面放拌菜﹑牛肉﹑豆腐﹑熟鸡蛋。以鲐鱼﹐鲨鱼做肉脯煎煎饼﹐与饭一起上桌时﹐盛在祭器里更好。
(8)搭配汤和佐料酱。
<炖汤>
(1)萝卜切成薄四角形与海带一起炖汤。海带捞取切成四角形。切萝卜条炒后以酱油和盐调味﹐并与饭协调。准备肉汤﹑鱼汤﹑菜汤等3汤与饭一起端上桌或把这3种汤混在一起做杂汤。
