==原料】

去骨连皮狗肉2000克,母鸡一只(约1000克)、猪瘦肉500克、肘子500克。 天冬10克、生地10克、枸杞15克、甘草3克、柠檬25克。葱25克,料酒20克、胡椒面3克、味精1克、香油20克、豆瓣50克。

【制作过程】

将狗肉皮在火上燎黄,用水泡软,刮洗后用凉水浸泡,待肉质发胀时,用木棒在肉上轻轻反复捶敲。边捶边洗至血水排尽肉质松软,将狗肉切条,用凉水泡上,将大冬、生地、枸杞、甘莫、柠檬洗净。鸡剔下胸脯肉,汆下的鸡肉和肘子各改成八块,姜切片,葱切节,鸡肉和肘子用姜、葱水泡上。把瘦猪肉和鸡脯肉分别用刀背剁茸,分别用姜、葱水泡上。炒锅置火上,放入清水,烧沸后放入一段柏木去臊气,再放狗肉、葱姜,料酒,用中火煮透,将狗肉捞出冲洗漂凉,鸡肉、时于用沸水氽透。锅内掺入清水,放鸡。肉,肘子、葱姜,用武火烧沸,打净浮沫,移炆火煮至肉熟时,下入狗肉、响把。将天冬、生地,甘草用纱布包好,连同狗肉等一起放入盛子内。把汤烧沸,下胡椒粉,料酒,冲入猪肉茸,待肉茸凝结时捞出肉末,将清好的汤滗入盛子内,用温棉纸封口,上笼蒸至肉火巴取出、捞出药包不用,将汤漠入锅内烧沸,冲入鸡茸,用同样方法清好汤,加盐,味精调好味,倒入狗肉盛子内,加盖封严,覆笼大气蒸。将柠檬去皮、去瓤切成细丝,分成两碟。豆瓣用油酥香,分成两碟,与蒸好的狗肉同时上桌。
