补充资料:浓缩维生素c酸枣汁

主要原料:酸枣、白糖、二氧化硫等。

设备用具:真空浓缩锅、空瓶。

制作方法:选色泽为红绿相间的酸枣(维生素c含量高),用清水冲洗干净,再泡在浓度为0.2%的二氧化硫溶液中,约10~20分钟,捞出后,用清水浸泡24~48小时(枣水比例为1:1)后,取出榨汁,将汁与浸泡水混合均匀,称重,放入真空浓缩锅中加温浓缩(真空度为650~700mm水银柱),温度在50℃~60℃,浓缩至原重量的1/4停止加温,将浓缩液一次全放出并称重,按1公斤浓缩液加1公斤白糖的比例加糖,再加热至50℃,待糖完全溶解后,即可装入消毒瓶内。 所制成品浓缩酸枣汁,每100克中含维生素c500毫克以上。
