糟溜鲈鱼片
主料： 鲈鱼一条（600克），蛋清一只，盐25克，糖20克，味精10克，糟油20克，湿淀粉适量。
做法： 1、鲈鱼斩杀去鳞鳃、去内脏洗净，将鱼头、尾斩下，鱼身去骨，鱼肉切成片。放入盐、味精、酒、蛋清，用湿淀粉上浆。
2、锅上火，倒入清油，三成热时鱼片下锅滑散拉熟，沥油，锅中留少量油放入京葱、姜片、清汤、味精、盐、糖，再把鱼片倒入同煮，然后放入糟油勾芡，淋上油出锅装盆即可。
特点： 外浇一层金黄色的汁，光亮润泽，鱼片软嫩，鲜中透甜，有浓郁的糟香味。
