糟溜鲈鱼片
主料: 鲈鱼一条(600克),蛋清一只,盐25克,糖20克,味精10克,糟油20克,湿淀粉适量。
做法: 1、鲈鱼斩杀去鳞鳃、去内脏洗净,将鱼头、尾斩下,鱼身去骨,鱼肉切成片。放入盐、味精、酒、蛋清,用湿淀粉上浆。
2、锅上火,倒入清油,三成热时鱼片下锅滑散拉熟,沥油,锅中留少量油放入京葱、姜片、清汤、味精、盐、糖,再把鱼片倒入同煮,然后放入糟油勾芡,淋上油出锅装盆即可。
特点: 外浇一层金黄色的汁,光亮润泽,鱼片软嫩,鲜中透甜,有浓郁的糟香味。
