【原料】

鸭肝100克。 水发玉兰片15克、冬菇15克。白糖30克、酱油10克、葱椒泥10克。葱10克、姜10克、甜面酱15克、绍酒20克、猪油150克。

【制作过程】

鸭肝洗净,放沸水中氽过,切成1.5厘米宽的条,用竹签在条上划一个小口(易进汤汁)。将水发玉兰片切成3.3厘米长的片,冬菇切成两半,均用沸水焯过。炒锅放猪油少许,烧至六成热(约132℃),放白糖炒至红色时加清汤、酱油、葱椒泥、葱段、姜片、玉兰片、冬菇煸炒,制成料汁倒入碗内。炒锅再放猪油烧至七成热(约154℃),加甜面酱炒出香味后,放鸭肝、清汤、绍酒以及制好的料汁,用小火炆5分钟,剩1/3汤汁时去掉葱姜,盛入盘内即成。
