由胃黏膜腺体所分泌的黏液覆盖在黏膜表面,形成保护层。它除有润滑和保护胃黏膜免遭食物的机械性损伤作用外,还能有效地阻挡胃腔内的H+接触胃黏膜。胃黏膜上皮细胞顶部的细胞膜相邻连接致密,构成又一道屏障。由于细胞膜为脂蛋白,因此,非脂溶性物质很难透过黏膜层,从而阻碍了胃腔内的H+大量逆向黏膜内扩散,胃黏膜上皮细胞分泌的HCO3-,从黏液深部向表面扩散,遇有由胃腔黏液表面向深部扩散的H+时,即发生中和,使黏液层内形成pH梯度,黏液层腔面pH值低,而黏液层深部的pH值呈中性或偏碱,使胃蛋白酶缺乏起作用所需要的pH环境,从而防止了胃酸和胃蛋白酶对黏膜的损害。
