嫩鸡腰400克,湿冬菇50克,笋花75克,火腿25克,绍酒10克,酱油10克,精盐5克,味精5克,上汤250克,湿生粉20克,麻油1.5克,猪油100克。
做法
1、将鸡腰洗净后上笼炊熟取出。冬菇洗净去蒂后每个切成两半。火腿切片。
2、烧热鼎,加入猪油、冬菇、笋花、火腿片略炒,溅入绍酒,再加入上汤、酱油、精盐、味精,用文火焖2分钟后加入鸡腰,再焖片刻,用湿粉打芡,加入麻油拌匀上盘。
