原料
主料:鲜猪肺800克。
配料:面粉500克、鸡蛋2只。
调料:绍酒20克、味精6克、精盐20克、胡椒粉2克、麻油30克。
制法
(1)将猪肺用水灌洗成白色,倒去肺内水分。面粉揉成面团,入盆内放上清水,反复揉洗,洗成面筋(面筋另作别用)。鸡蛋打入面水内,加入麻油、精盐8克、味精3克拌匀,灌入肺中,扎紧管口。
(2)炒锅置旺火上,加水烧开,下猪肺煮20分钟,再改用小火煮3小时。然后取出,切成5厘米长、3厘米宽、0.5厘米厚的片,放入汤锅中,撒上胡椒粉,加入精盐、味精,略烧至入味,起锅装入汤碗内即成。
特点
