简介
杭菊产于浙江的桐乡、海宁一带,为饮用药用佳品。如把杭菊加上鸡丝烹调成菜,那就是浙江杭州地区著名的一道菜肴“杭菊鸡丝”了。
菊为多年生草本植物,美丽多姿,芬芳怡人,且能凌霜盛开,故有“花中君子”的美誉。桐乡县是杭菊的主要产地,据《浙江通志》记载,这里已有三百多年的植菊历史。明末清初的农学家张履祥在其《补农书》中已把菊花作为桐乡特产。
杭菊又名甘菊,花瓣洁白如玉、花蕊灿黄似金,朵大肉厚,香浓而幽雅,味甘醇郁,既可单独泡水饮用,又可与茶同泡。杭菊还具有清热、明目、降血压的功效。相传清朝年间,杭菊曾作为贡品,以它为原料在宫廷制成菊花防暑汤。在民间,菊花作为配料烧菜而被大量采用。

制作方法
【原料】
鸡脯肉150克,杭菊20克,水发香菇50克,精盐5克,白糖5克,味精1克,鸡蛋清2个,湿生粉5克,干生粉7克,鸡清汤50克,芝麻油5克,生油250克。
【制法】
(一)鸡脯肉剔去筋膜,洗净血水,挤干水分,批片后切成细丝。鸡蛋清放在碗内搅开,加干生粉拌匀,放入鸡丝上浆,再放入麻油轻拌一下。
(二)杭菊撕下花瓣,摘去瓣尖和根部,放入水中浸泡一小时(中间换水一次),以除去苦味,然后捞起沥干。香菇去表皮切成丝待用。
(三)炒锅置中火上烧热,放入生油,烧至三成热时,下鸡丝滑熟,倒入漏勺沥去油。
(四)原锅留余油,放入香菇丝稍煸,迅速加入杭菊花瓣、精盐、鸡清汤、白糖、味精,用湿生粉勾芡,倒入鸡丝颠翻两下,淋上熟油15克即可装盆上桌。
