原料配方(制10份) 糯米粉1千克 锦白糖200克 红糖200克 糖桂花20克 熟猪油500克

制作方法

1.将绵白糖、红糖和糖桂花置案板上,加入熟猪油50克,拌匀搓揉成团,擀成1厘米厚的方块,再切成1厘米见方的糖丁。

2.将糖丁倒入圆形竹匾内,撒少许糯米粉、用手拉动竹匾,使糖丁于滚动中裹上一层粉衣,然后放入篾筛中洒上一些清水,再放回匾内并加添糯米粉继续摇动竹匾,如此反复操作,直至裹成直径2厘米大小的生元宵。

3.将炒锅置于微火于加热后,用油滑锅,把元宵倒入,改用中火,炒约七八分钟,听有沙沙声后,再分次将熟猪油加入,继续翻炒,见元宵鼓起膨胀即熟。
