秋天,是海洋与陆地上的食材都变得更加美味的季节,这个时分,海里的鱼累积了脂肪而肥嫩、田里的稻米金黄饱满、蔬菜熟成色泽丰富。

材料:胡麻豆腐、高汤约1120cc、吉野葛粉70g、白胡麻80cc、海胆30g、清酒50cc、酱汁、柴鱼高汤500cc、酱油100cc、味淋25cc。

做法:

1.将高汤、葛粉、白胡麻、海胆、清酒等材料全部倒进锅内,以中火熬煮。

2.轻轻搅拌约15~20分钟,汤汁呈现浓稠状,转为小火,为了呈现秋天落叶的颜色,主厨在此加入少许调理用的食用色素,倒入模型中,在室温里静置至微凉。

3.加少许冷水在表面,放入冰箱冷藏一晚。

4.柴鱼高汤加上酱油与味淋,小火加热后静置、冷藏备用。

5.将豆腐取出模型,可依个人喜好缀以生海胆、三叶芹等食材装饰,最后淋上柴鱼高汤酱汁。

tips:美味小秘诀

1.将海胆加入锅中与其他材料一同熬煮时,可以先用少许清酒将其轻搅融化。

2.置于模型里的豆腐进入冰箱冷藏前,加一点冷水是为了防止表面干燥。
