吃甲鱼时，人们一般都喜欢吃甲鱼的裙边。其实，甲鱼的腿也是味道很好的部位，这个部位属于人们所说的"活肉"，就是经常活动的部位。甲鱼的腿和水发的海参相配，是原料的形状和色彩相似的一种组合方法。一个经过蒸，一个用油滑一下，口感又酥又糯，而且营养丰富。
〖主料〗鳖腿 水发刺参
〖辅料〗鱼泥
〖调料〗食用油 盐 味精 黄酒
〖做法〗
1．先将鱼泥放在鳖腿上，上笼蒸。
2．刺参下油锅划一下油，出锅。
3．另起锅，放入刺参、鳖腿，加调料，勾芡，然后出锅装盘。装盘时把鳖腿鱼泥围放在盘子的边缘。
〖特色〗色形俱美，酥糯合一，营养丰富。
