≮美食原料≯

豆腐皮75克,猪腰150克,口蘑25克,冬笋25克,熟猪油10克,味精1.5克,料酒10克,盐2.5克,胡椒粉2.5克,酱油15克,葱段15克,姜片2克,鲜汤适量。

≮美食做法≯

1、将豆腐皮润回软,撕成大片;猪腰去掉外皮,一切两半,片去腰臊,再改刀切成大薄片,放入碗内,下入葱段、姜片,料酒拌匀,再加入适量清水泡上;冬笋剥皮,洗净,切成薄片;口蘑用温水泡软,切成片,碗内原汤过滤澄清后,将口蘑片放回,继续浸泡。

2、锅架旺火上,加入泡口蘑汤和鲜汤烧开,再放入胡椒粉、盐、酱油烧开,然后把腰片连同葱段、姜片和汁一起倒入,用手久搅动,氽熟,捞出葱、姜,待用。

3、原锅架火上烧开,撇去浮沫,使汤色澄清后,将腐皮、口蘑片、笋片下入,烧开氽熟,放入味精,调好口味,淋入熟猪油,盛入汤碗内,最后把腰片撒在汤碗中即可食用。
