【原料】
鲷骨(赤宗鱼骨)300公克、红、白萝卜丝各1/2杯、味噌80公克、 糖、味精各1/8小匙、葱花2大匙
【制作过程】
1.鲷鱼(或其它新鲜鱼骨)切块,入开水川烫捞出,再用清水洗净.
2.锅内入水31/3杯烧开,将红,白萝卜丝煮软,续入鱼骨煮滚,去除泡沬,将味噌、 糖、味精置小漏杓内,以木棍(或汤匙)拌匀,立即熄火盛碗,并撒上葱花即成.若将鱼骨改用豆腐,海带芽,水则改用鱼干汁(小鱼干300公克去头及内脏,加水5杯以小火煮20分钟即成)较理想.
