补充资料:芙蓉黄管
猪黄管200克,鸡泥100克,黄瓜皮、火腿、香菇、香菜各适量,鸡蛋清5只,上汤300克,料酒l茶匙,生粉、鸡油各少许。
制作:
①将蛋清打入碗内,加凉上汤、盐、用筷子搅匀,除净浮沫,放锅内用小火蒸熟,成为拨饺财底。
②用清水把猪黄管洗净,放入锅内,煮滚,用小火煮至八成烂捞出,用清水洗过,摘净油筋用竹筷子将其翻过来,用刀均匀地切成蜈蚣形花刀,然后将鸡泥均匀地抹在一部分黄管内。
③黄瓜皮、香菇、火腿切成粗丝,分别沾在黄管刀口的翻开处,然后放锅内蒸透取出,截成4厘米长的段,均匀地摆在拨饺财底中间,一部分不抹馅用水灼熟捞出,摆在芙蓉底四周。
④锅内放上汤、盐、料酒,煮滚后撇去浮沫,用生粉水勾芡,浇在原料上,淋上鸡油即可。
