芙蓉黄管
猪黄管200克，鸡泥100克，黄瓜皮、火腿、香菇、香菜各适量，鸡蛋清5只，上汤300克，料酒l茶匙，生粉、鸡油各少许。
制作：
①将蛋清打入碗内，加凉上汤、盐、用筷子搅匀，除净浮沫，放锅内用小火蒸熟，成为拨饺财底。
②用清水把猪黄管洗净，放入锅内，煮滚，用小火煮至八成烂捞出，用清水洗过，摘净油筋用竹筷子将其翻过来，用刀均匀地切成蜈蚣形花刀，然后将鸡泥均匀地抹在一部分黄管内。
③黄瓜皮、香菇、火腿切成粗丝，分别沾在黄管刀口的翻开处，然后放锅内蒸透取出，截成4厘米长的段，均匀地摆在拨饺财底中间，一部分不抹馅用水灼熟捞出，摆在芙蓉底四周。
④锅内放上汤、盐、料酒，煮滚后撇去浮沫，用生粉水勾芡，浇在原料上，淋上鸡油即可。
