【原料】
主料:鳖1只,约800克。配料:枸杞子30克,淮山药30克,女贞子15克,熟地15克。调料:料酒、精盐、葱段、姜片、猪油、鸡汤各适量。
【制作过程】
①将鳖宰杀,去内脏,放入热水中浸泡,去皮膜,去壳斩成5块,下沸水锅,焯去血水,捞出,洗净。枸杞子、淮山药、女贞子、熟地分别去杂,洗净。
②锅中注入鸡汤,加入鳖块、药物、料酒、盐、葱段、姜片,煮至鳖肉熟烂,拣去葱、姜,淋上猪油即成。
