性质:存在于肌肉中的载氧物质。由一条弯曲折叠的蛋白质链(珠蛋白)和一个血红素分子构成。分子量17 000。不同动物的珠蛋白的氨基酸数目和顺序不尽相同。人体的由152个氨基酸组成,而巨头鲸的则由153个氨基酸组成。不同来源的肌红蛋白分子都有相同的构象,整个分子中肽链77%成α-螺旋体构象,有八段长度为7~24个氨基酸残基的松散肽链,C-末端有一段无个氨基酸残基的松散肽链。肌红蛋白能可逆地结合氧分子,因而能贮存和输送肌肉活动所需的氧。人体的心肌中肌红蛋白含量甚高。
