材料：香菇（干）10朵30公克 甜豌豆片60公克 胡萝卜片20公克 白果10粒 笋片30公克
调味料：糖1小匙 胡椒粉少许 酱油（膏）1汤匙 盐1小匙 乌醋1汤匙 高汤2汤匙 淀粉水1汤匙 香油1汤匙
作法：
1.将香菇用水泡开稍挤干水份，内外两面各切花刀，沾裹淀粉，以手捏紧，入中温油锅中，大火拉油，捞出。
2.锅内油倒回油筒，留油1汤匙，倒入调味料及所有材料，同炒拌匀，加淀粉水勾芡，淋上香油盛于烧热之铁板上即好。
注：
1.香菇选直径约4公分宽，厚薄一致之香菇较佳。
2.以此作法做出之菊红，香而且嫩。
3.白果须先煮熟，如用罐头白果，也入油锅中拉油。
4.此菜刀工好，则拉油后，则成颗粒状如菊花瓣一样故名菊红。
5.切花刀时，由内外二面各切花刀，卷起时有黑面，有白面成双色菊红。
