配料:
嫩鸡1只(重约750克),油100克,鸡蛋4个,黄瓜25克,西红柿50克,香菜25克,花椒盐适量,料酒10克,姜汁8克,盐、味精、面粉、淀粉、肉料各适量。
特色:
色泽金黄,味肃里嫩,鲜香适口。
制作方法:
(1)将鸡收拾干净,放锅中加水,加入肉料煮至7-8成熟捞出,拆去骨头装在盘内,加入姜汁、味精、料酒,上锅蒸熟,两面粘面粉。
(2)鸡蛋打碎加入盐、淀粉、料酒调成蛋糊。
(3)将滚粘好面粉的鸡肉在挂蛋糊。
(4)炒勺放油上火烧至5-6成热时,将挂好蛋糊的鸡肉炸至金黄色,捞出控油装盘,将黄瓜、西红柿、香菜洗净改刀成不同的花形围在四周。跟花椒盐味碟上桌。
