来源：N-亚硝胺类化合物由亚硝化剂(亚硝酸盐)和胺类在一定条件下，经亚硝化作用生成。在环境中大量存在亚硝基化剂和胺类，例如有机合成，染料、橡胶制造和食品着色防腐中的亚硝酸钠和胺类，化肥中的硝酸铵，废气中排出的氮氧化物等等，这些亚硝胺的前体物质均可在环境中，动物体内，人体内，食品中合成。在面粉、奶酪、烟熏肉、鱼及其他食品中均可检出。合成切削油也可能含有亚硝胺类物质。
